Between city icons, a collection of stunning national parks and endless stretches of golden beaches, New South Wales is home to some of Australia's most spectacular holiday experiences. Your scenic road trip will start with Sydney's glittering harbour and beachside beauty before bringing you up into the Blue Mountains, a region rich in wildlife and magnificent scenery. Continuing north you'll have the chance to try some of Australia's best wines at Hunter Valley and experience its rich marine life in Port Stephens. Here, whales and dolphins vie for your attention. Then, after a rural retreat, end in Byron Bay's boho chic with a beachside stay. Along the way, you'll stay in some of the region's finest hotels, ranging from mountain lodges and city-centre boutiques to spa getaways and golden-sands resorts.
Day by day itinerary
Depart the UK to fly to Australia and begin your tailor-made journey.
On arrival, transfer to your luxurious accommodation – The Langham. It's one of Sydney's finest luxury properties, featuring some of the largest hotel rooms in the city, magnificent harbourside views and a superb all-inclusive day spa. Don't miss out on the afternoon tea, served in the elegant Palm Court restaurant. It's also just minutes from Sydney's famous attractions, including the world's most recognisable waterfront and its icons – the Harbour Bridge, Opera House and Botanic Gardens. You might also want to get into the Aussie swing of things, indulging in the city's award-winning restaurant scene and relaxing on its white sands. Bondi, for its surf culture, is a definite highlight.

Collect your hire car and drive inland to the Blue Mountains National Park, a UNESCO-listed gem just 90 minutes from Sydney. It's a tranquil contrast to the city bustle, featuring a truly magnificent collection of carpeted valleys and rocky escarpments. It makes for picturesque bushwalks, impossibly scenic drives and even railway rides. Your base here is the Spicers Sangoma Retreat, a contemporary boutique hotel that combines multi-course full-board dining with the indulgences of a pampering spa, all set to views across the Blue Mountains' old-growth forests and limestone crags.

Swap wildlife for wine as you leave the Blue Mountains and head north to the rolling hills of the Hunter Valley. Just remember to find time to explore on hiking trails, biking routes and hot air balloon rides or simply relax with your hotel's spa and restaurant. The latter, of course, features an excellent wine list along with spectacular views across the Broken Back Ranges.

Head back to the coast to charming Port Stephens. Known as Australia's 'Dolphin Capital', it's home to a resident pod of around 150 bottlenoses; watch them frolic and play on a cruise or you can even get right up close with the chance to swim with them. There's also an annual whale migration, with humpbacks passing through between May and November. Lastly, Port Stephens is famed for its unspoilt natural surrounds, with walks tracking its stunning coastline and delightful collection of beaches. There's everything from surfer's getaways to sun-baked golden sands to keep you occupied.

The penultimate leg of your holiday takes you to your award-winning guest house, a charming bed and breakfast just a short drive from the town of Bellingen. This is rural New South Wales at its best, with your delightful, Tuscan-style accommodation host to just three suites and 13 acres of rolling farmland – a view best taken in from your private terrace. You'll also want to head out and explore, with scenic drives bringing you through lush valleys to national-park rainforests that hide secret waterfalls. This diverse natural world has also given rise to something of a foodie renaissance, best sampled in Bellingen's organic restaurants.

Returning to the coast you'll arrive at Byron Bay.
