In Hobart, Tasmania’s southwestern state capital, business is booming. The hotel itself is positioned on the fashionable waterfront in among the cafés, bars and restaurants – a highlight of the city’s intimate atmosphere. Housed in a former jam factory, the hotel’s walls are now splattered with paintings, prints, sculptures and design objects that simply oozes style and it's easy to see why it has picked up a stack of accolades. While its exterior features original 19th century architecture, the interior blends in ultra-modern design and contemporary art as each of the 56 rooms and suites are individually designed. Look to upgrade to a Harbour View Room complete with spa bath or an indulgent terrace suite.
Breakfast and dinner is in Henry’s Restaurant, where talented head chef Terence Barrett’s menus feature locally produced food and wine. As carefully curated as the artwork, dishes include truffled eggs, grass fed eye fillet steak and fresh oysters. There’s also the aptly named Jam Packed Café where you can sip on espresso and soak up its waterfront views. It also serves all day breakfasts and, in the evening, craft beers and ciders.
After dinner you might just find yourself in the IXL Long Bar where an extensive drinks list is served with a splash of heritage architecture and the hotel’s trademark obsession with design. Other than the international-standard dining and free WiFi, there’s also an onsite gym for those looking to stay in shape.
